CUBAN ROASTED PORK

CUBAN ROASTED PORK

Ingredients

1 cup guava jelly

3/4 cup Lawry's® Havana Garlic & Lime Marinade With Lime Juice, divided

1 boneless pork loin roast (2 1/2 pounds)

Directions

1. Mix guava jelly and 2 tablespoons of the marinade in medium bowl. Set aside. Place pork loin in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 2 hours or longer for extra flavor.

 

2. Preheat oven to 350°F. Remove pork loin from marinade. Discard any remaining marinade. Place pork loin in shallow roasting pan.

 

3. Roast 1 1/4 hours or until desired doneness. Spoon 1/2 of reserved jelly mixture over pork during last 10 minutes of cooking. Let stand 10 minutes before slicing.

 

4. Meanwhile, microwave remaining reserved jelly mixture in small microwaveable bowl on HIGH 30 seconds or until melted. Stir until smooth. Spoon pan drippings over sliced pork. Serve with warmed jelly mixture.
