SEASONED BLACK-EYED PEA FRITTERS

SEASONED BLACK-EYED PEA FRITTERS

Ingredients

2 tablespoons Lawry's® Steak & Chop Marinade With Garlic & Cracked Black Pepper

1 cup sour cream

2 cans (15.5 oz. ea.) black-eyed peas, rinsed and drained

2 large eggs, slightly beaten

1/2 cup finely chopped onion

1/2 cup finely chopped red or orange bell pepper

1/2 cup all-purpose flour

2 teaspoons Lawry's® Seasoned Salt

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup vegetable oil

Directions

1. In small bowl, combine Lawry's® Steak & Chop Marinade With Garlic & Cracked Black Pepper with sour cream; refrigerate until ready to serve.

 

2. In large bowl, mash peas. Stir in remaining ingredients except oil.

 

3. In deep 12-inch nonstick skillet, heat 1/4 cup oil over medium-high heat. Into skillet, spoon bean mixture by 1/4-cupfuls to make 6 fritters, then flatten slightly. Cook fritters, turning once, 7 minutes or until golden brown. Remove fritters; drain on paper towels and keep warm. Repeat with remaining oil and bean mixture. Serve immediately with dipping sauce.
